BIG batch Salsa

    Figure should get 50 (+-) pints from what is cooking on the stove. This batch added in Thai Hot Peppers along with the Jalapenos. Next batch of tomatoes will make some more Juice.

    Gonna pick all the sweet corn this evening. I figure its done all it gonna do.

    Do you have a recipe you follow? I got tomatoes running out my ears in the garden. Was trying to find a salsa recipe to try.

    Here ya are lingr:

    8 cups of tomatoes
    2 large green peppers
    4 cups of onion
    1 cup of salt
    2 tbl garlic
    2 tbl cumen
    1 cup white vinager
    1 tbl tobasco
    2 15 oz tomato sauce
    1 12 oz tomato paste

    Now for the kick ... add as many Jalapenos as you like ... I put in a bunch, ran thru the food chopper with seeds and all.

    bring the batch to a boil for 30 minutes or till it gets to the thickness you like. I fill the jars and process in a hot water batch for 15 minutes.

    I also hand dice my tomatoes, onion, and green peppers as I like it chunky. As it cooks it will reduce.

    Depending on how much you want just make multiple batches in as many large pots you like.

    Was a busy weekend. Brewed up two more batches of Salsa, and 2 batches of tomato juice. Have 3 more batches of salsa cooking now. Have a few tomatoes left so will make a small batch of Pasta Sauce today also.
