Field Dressing Deer

    Here's the way I fix liver, because my Mother fixed it this way.

    First, fry 1/2 pound of bacon. Remove bacon and add one large chopped onion. Fry on med-low until clear. Push onions to one side, place floured liver in pan and cover with onions. Place more liver on the other side and cover with onions and place bacon on top. Cover, and cook on low until done. About 15 minutes.

    This tastes best with a large pile of mashed potatoes.

    I've never soaked my liver in buttermilk, but it sounds like a good idea. I'll try it next time.

    I think other liver is good, like pork liver with onions is really good, just not antelope liver! Plumber, my mom does the same thing minus the bacon, but hey bacon makes everything better so I should probably start doing it that way!

    Yeah, it filters out the toxins. And I won't even tell you what it looks like to me. :(

    I'm not 'younger'. Though I must admit to liking fried chicken livers on occasion. It's just that big chunk of liver that kind of makes me queasy. Let's just say it reminds me of something else and I just can't eat it. When we were kids my Mom would make liver. She also made it with onions but I think that was the only meal my Mom would not make us eat. :)

    This sounds good enough to try, especially after soaking it in buttermilk, or maybe plain milk.
    When I was a child, I hated liver. Then, as I grew older, I developed a taste for it. Breaded and fried chicken liver topped the list with pork and beef fried with onions following in that order. Then I began deer hunting and found the deer liver to be the best of all.
    Now that I'm older, I have again lost the desire for liver of any type. And now that I'm older, I don't have to eat it if'n I don't want.
    As a child, living on a farm, we had our meat processed. My Dad wasn't one to waste anything so we ate liver, heart, tongue and brains. None of which are on the menu any more. Just me.
    But if you like it, all the better, as long as I'm not invited to supper. :p

    Doesn't anyone save the kidneys? I think they're better than liver.

    I take the straps and quarter them never opening the internal cavity to field dress and I dump the whole thing in the gut tub and hunt coyotes over it that evening.

    I haven't gutted a deer in thirty years.

    I keep the heart. Liver I use for summer catfishing . Now ya got me wishing I was cat fishing. Lol

    I'm just catching up on this thread, (what can I say, I'm from bama) and one thing that I do diff is I do not saw thru any bone. The bone meal from the cutting mixes in the meat and changes the flavor. I cut all the meat from the bone with a fillet knife. After all this is done, withiin a couple hours of shooting it, I soak all the meat overnight in some coolers with a mixture of vinegar. About 1 Tbs. per gallon of water. All this makes me hungry! I know I have a piece of backstrap in the freezer. All I gotta do is dig it out from under the fish! lol
