If it wasn't for smoking fish, the inside of my place would smell like a fish market. I love it fried but it do tend to make a small apartment smell a bit fishy. I even buy it if I cant catch it. Lately I have been sampling tilapia. Not bad. I cant remember how to spell the other filets I tried...but they're a type of white fish. But, my all time fave is Cod. I will have to remember the portable smoker when I go get my first load of junk in Iowa. Until then I will have to jerry-rig a smoker...Maybe I can convert a bedroom or closet. (That should go over like a fart in church with the landlord.)
I fry all our fish in a fry daddy out on the back deck. That way it doesn't smell up the house. Plus the fries and the hush puppies!! mmmmmmmm,m!
Hombre, you need to go up to lake Tawakini by Greenville, TX. I've caught a ton of Crappie up there. And some monster Appaloosa Catfish. They are a flathead strain but spotted like an Appaloosa horse. Good white, clean meat!

One of the officers in charge of that district told me about Tawokani. I called him about pig hunting. I am trying to find new digs around there; rather when I stabilize my finances, I will look up in that area.

Thanks for this tip...Catfish are a big part of my fish diet.
Fishing is Biblicly important! Just finished off the last couple of pieces of catfish from last night fry. Breakfast of Champions...that's what my dad called the left over bullheads I used to catch piles of. Skin 'em, remove the head and guts and fry them whole after a roll in the cornmeal. I do have one "tip" to offer. I tried the "Shore Lunch" brand of New Orleans batter mix. I'm not rightly sure what spice combo is in it, but the taste was uniquely pleasant. Still can't beat some form of well-seasoned cornmeal or corn flour when frying fish!

Keep whatcha can eat and let the others go for another day.
We might be in luck starting Monday Spoon....Sun forcasted for 5 days straight. I'm thinkin around the end of the week. A trip to Lake Pomme De Terre is in order. Water is High and the spill way is wide open. Down stream in the river the Crappie will be swarmming. Besides the limit is double in the river and NO LENGTH LIMIT...... Otherwise it's 9" in the lake.
I hope it'll be warmer at Pomme. We're still gonna be 10 degrees COOL'r than averages for the next 7-10 days. Best of luck in trolling up some slabs!
rollin in the dough

I am partial to rollin my fish in a thinned out scrambled egg and then shakin em in finely rolled out cracker crumbs. Fish don't take long to cook and cracker crumbs get brown about the same time the fish gets done just right. Just lower the heat until the "doneness" of both come out to be the same time. I like the flavor better too.
I mix cornmeal and floor together. 1/3 flour and 2/3 cornmeal, salt and pepper. put mixture in a bag with some fillets and shake till covered. Deep fry to a golden brown. Good enough to smak yo mama from the table! lol

I will have to try that. Throw the cornmeal on the floor and just drop fish on the floor after? kick it around or maybe sweep it up with the broom and :D

I have used the combination too. I want to try corn flour. It may cook a bit harder than corn meal because it isn't so grainy. Good idea. TY
I shake my crappie filets in a mixture of half yellow corn meal, half corn flower, garlic powder, onion salt. Deep Fry till golden brown. The garlic wards of Vampires, Eat a lot of it, AND AIN'T NEVER SEEN ONE...So it works....

I'll stick to turkey. LOL
Waiting on some gator
Don't wait...go shoot one! ;) Ain't it about that time for hunters to collect a bunch out of the bayous and swamps? Can't recall the season dates in Louisiana for the life of me, but figured they all oughta be close to one another along the Gulf. As for *****, cleaned correctly with the excess fats & kernels removed then par boiled in peppercorn laden water with a splash of vinegar, finished BBQ style on the grill makes for fine eats :D
Venison on Saturday

Damn ! only 8lbs of stew meat and a 3lb backstrap left; and the October deer opener is in "October" !!
